a) http://custom.nimblex.net/ ~ Notice that this tool have KDE desktop enviroment as default, but if you have a decent machine it would work fine. You can select all your tools you want and keep unwanted software out, it's pretty easy and user friendly.

b) http://susestudio.com/home ~ This tool will allow you to built your linux distro based in SUSE 11, SUSE it's pretty stable so it's a wise choice i guess.
